Marleña translates to ocean firewood. Cuisine representation bears in mind Mayan and Incan culture and history. All the food is cooked from a wood fire grill or clay oven and is seared and is served on a thick rustic wooden block/presentation. Use high end seafood and steak dishes as inspiration for colors and elegance meanwhile keeping everything very rustic. Sophisticated presentation, very artisanal in nature.")
