Mobile coffee start-up needs a logo

Food & Drink
Green Beanie Coffee Company. We will be a mobile coffee trailer. Basically a concession stand in an 8x15ft trailer selling gourmet coffee and espresso products in a drive-thru arrangement. We may also begin selling pastries/pre-packaged baked goods. Our primary customer is a commuter stopping by quickly on their way to work. We will also target weekend tourist foot/vehicle traffic visiting the Outer Banks (North Carolina beaches). Many of the commuters are retired military or government employees, the tourists are mostly from New York or New Jersey and come to the beach for a week.
Logo types to explore
The name of the company is a play on the fact that I am a retired Green Beret (beanie is a nickname mocking the hat worn by Special Forces) in addition to being an explanation of green coffee beans. The supplier of the coffee (our roaster) is also a retired Green Beret so the strength/history of the unit means a lot to me. I would like the idea of the beret as well as the coffee bean incorporated into the design. I want to avoid cartoon-ish characters and instead focus on a bold, clear logo that highlights the beret, the coffee bean, and possibly a coffee cup. The name of the company doesn't need to be heavily featured. There is an insignia used by Special Forces called the "Regimental Crest" (Google "special forces regimental crest" and you can see many good examples). I don't want the crest featured specifically but I wouldn't mind some of the design elements being used like the crossed arrows and sword. Even if these elements aren't used in your submission, the insignia's layout and design are very appealing. I am looking for something unique, easy to distinguish, and easy to recognize from a distance since we will be primarily a road-side marketplace.
