Fast Casual Restaurant, featuring yakitori "red sticks". Yakitori is a traditional Japanese method of grilling meats on sticks. All the sticks will be red, hence the name "Red Stix". Guest can get a vermicelli bowl or Vietnamese sandwich called a banh mi. Similar to an elevated fast food experience. Fast casual environment with a yakitori master at the helm. Guest can engage with cooking process since we'll be cooking in front of them, similar to going to a hibachi restaurant without the price tag. Average ticket price is $12 with a beverage. The venue will have 20 other food stalls, similar to Eataly in NYC or Grand Central Market in L.A. The space will also offer a concert stage for local and national musicians.

I like the modern look. and can be interpreted to be a little "asian" like.

Red Stix is similar to an Asian Chipotle; the difference is that the meat will be grilled on red skewers, hence the name "Red Stix." I would like a simple design that is memorable and can be made into a national brand. Modern yet witty. The red skewers in itself is a branding element. When guest take pictures of our product I want them to know that its from "Red Stix" and a Chef Uno branded restaurant.
The yakitori grill will be in the front and center of the food stall. I have 315 square feet of space. It's almost like working in "tiny home". There will be areas within the stall that people can stand and eat. The first location will be located in the Legacy Food Hall located in Plano, Texas. There will be modern touches to the interior like a large mural of Tokyo to emulate eating along the city streets. But we'll also used refurbished wood so it has a warm feel of a traditional ramen house.
