Nail a brand for a hip new spot, Betula Restaurant

Betula Restaurant will be a casual, but sophisticated restaurant, that will serve a local and seasonal menu drawing from the chef's international experience. The restaurant will attract a wide audience from the local city and towns. Target demographic 26-60 years old, but will also attract both university students and the local senior populations.

Betula is the Latin/Scientific word for the family of Birch Trees. The chef and owner is very close with nature, and much of his menu is cooked over smoke/charcoal/wood fire. The birch tree is well known in the Aboriginal community to be very useful as well as an excellent fire starter. I would like a very simple design, but it has to convey these ideas. I have uploaded an image of a birch leaf that I really like. I feel the idea of this birch leaf, if we can get it just right will fit perfectly into the concept.
