Custom Spice and Dry Food Blends - or maybe -Flavors for the Real World

We custom blend dry foods and sell them in different ways: One way is we blend bulk packaged foods to the prison and school systems to feed up to 5,000 servings at a time - for instance we sell all of the soup base to the California prison system every year - it is in one gallon jars/ 4 jars to a pack and each jar yields 80 gallons of base after water is added. we sell about 250,000 pounds a year. We also sell "add water only" cheese sauces and gravies, etc. Plus we sell "add water only" enchilada sauce (and other items) to the California school system. Also we have a bottling line set up where we create custom flavored meat rubs for several clients and package in 8-ounce size shaker/pour jars for re-sale. One customer is now in every Safeway in the USA. We create the flavor, then we buy all of the ingredients from importers and wholesalers and do all of the custom blending and packaging and labeling in house. Also we create and sell bulk/ wholesale to large meat manufacturers who add our seasoning blends to meat and sell in stores like Trader Joe's and Costco as "value added" items. Picture buying a roast that is already pumped with seasoned juices and has a nice peppery/spicy rub on the outside that you take home and cook. We would sell the pump and rub to the large butcher. Our name will not be on any retail products as we would only be a vendor to the manufacturer in this instance. We are also a huge jerky seasoning manufacturer and have clients like O'berto Brands as a client for that. Again - we do not make the actual jerky, we create the flavor and sell the jerky seasoning in bulk. We also have the ability to make many sizes of packets of seasonings for dried food blends - picture ripping open a single-serve packet to make oatmeal, then picture opening a 5-pound packet of oatmeal - we can do any size, and we could blend the dry oatmeal with all of the sugars and flavors before we pack it, and make any flavor in the world. We can package like that as well. We do not do liquid food items - only dry. We are not "retail" and do not market ourselves as a retail brand. We are either "bulk direct sales" or "creators/blenders/co-packers". We also make many custom nut seasonings for many almond, pistachio, macadamia and other kinds of nut growers and retailers. We do not apply the spices to the nuts - the client does. We just sell them the seasoning in bulk boxes.
Other color requirements
The current Hi-West Foods "logo" is uploaded and is maroon and black. I like but I am open to a fresh look.
What we do is a creative process at first. When our customers approach us they envision a flavor, a color, a consistency, a complete visual and culinary profile of spice enhancements that will take their product to the next level of edible enjoyment. They want bright green wasabi macadamia nuts that will capture the Japanese market share by storm, or they want a succulent subtle gravy for their beef tips that will take you back to your grandma's house when you were a kid. They want a barbecue rub that will make their friends rave at the picnic. Or the schools and institutional clients will be looking for a low cost rice flavors that is high in color and flavor but low in sodium so it meets their dietary requirements, or a way to make 200 gallons of italian dressing in 10 minutes that will be better than store bought at a third the cost. IMPORTANT - our goal for this year is to get more clients for our barbecue rubs (or any dry blends) bottling line. We just invested heavily in new bottling equipment and need to fill as many bottles as possible with it to help pay for it. I would like to use our new logo as a basis to then go to the next level and develop a website to appeal to customers in California (primarily) who are looking for a local professional place to get their dry goods developed and bottled and labelled and packaged for resale.

And then… they selected a winner!
Bekar won my design contest for a brand package. The designs for the logo and letterhead were easily approved and he provided the required final files for these two items.
We worked on the business card and finally agreed upon a design. The envelope design was a nightmare! Bekar seem to have no concept of what a USPS #10 enveloped looked like. For instance, designs with return address in the upper RH corner (the postage area); logo in addressee data area, etc. Sent him a USPS #10 design template. The final design was almost complete, except that the logo still overlapped the address area slightly.
Ahh! The facebook cover page. The initial design started at the edges with a nice blue hue with a gradient that ended with a hideous puce green in the middle. I spent the time describing why I didn't like the message this was conveying. Even though I told him NOT to use green, all subsequent revisions exclusively used green. I final told him to just drop this item from the project. I could do better myself with clip art.
Before the design turnover phase ended, I asked Bekar for the required design files for the business card and envelope, i.e., an editable file (i.e. AI), a vector EPS file in digital (RGB) format; a vector EPS file in print (CMYK). All that I have for these items is web preview file, PSD with a 300 x 300 resolution.
Instead, Bekar let the clock on this phase run-out and collected the contest design fee. I fault Bekar for failing to deliver all of the required design files; and I fault 99Designs for release payment without a check that source files are present and marked as "final".
I sent Bekar a private message asking him to cure these problems before I posted this negative review, but received no response.
Along the way, they met lots of talented designers…
